X may have been used as a term for German sailors, who carried Y, which when directly translated into German means ‘sour herb’ and is usually finely shredded cabbage fermented by Lactic acid bacteria, on board in an effort to battle scurvy.
Although recorded as a colloquial term for Germans by the mid-nineteenth century, it was during World War I that X came to be used in English as a term for a German. The stereotype of the Y-eating German dates back long before this time, and can be seen, for example, in Jules Verne's depiction of the evil German industrialist Schultz, an avid Y eater, in The Begum's Millions.
